Bitterman's Sel Gris is a classic French gros sel (coarse salt) and makes a tremendous replacement for all coarse industrial kosher and sea salts. The culmination of two millennia of salt making experience on the exquisitely pristine coastal waters Île de Noirmoutier, this gros sel gris is a revelation. Produced in porcelain clay salt pans by paludiers who work barefoot, this salt is expertly harvested to ensure the gros sel crystals don't get too large or hard. Every crystal harbors bold mineral flavor and a silvery color imparted from the porcelain grey clay that forms the bed of the salt pan. Used mostly for all-around cooking and finishing hearty foods, this salt has coarse, moist crystals with impeccable balance and surprising suppleness given their heft.
Bitterman Salt Co. began by pure chance, and as another company altogether—the Meadow, founded in June of 2006 in Portland, Oregon, offering gourmet salt, bean-to-bar chocolate bars, vermouths and cocktail bitters, and fresh cut flowers. By October of 2006, The Meadow began selling salt wholesale to early adopters, like James Beard Award winning chef and restauranteur Gabe Rucker, James Beard Award winning chef and restauranteur Naomi Pomeroy, and James Beard Award winning chef and restauranteur Vitaly Paley. In 2012, Bitterman Salt Co. was officially established to proudly back the salt with a name that matches the mission of Bitterman Salt Co.: to bring flavor to life through salt.
